Interview with Master confectioner Veronika – Interview mit der Konditorenmeisterin Veronika Mader

The master students of the Confectioner’s Guild of Munich visited the company Hans Brunner GmbH in Mai 2019. During the last Brunner works tour, a student of the master class asked for Brunner’s support for the realization of her elaborate masterpiece. Of course Brunner said yes! Master confectioner Veronika, who recently graduated, made time for an interview:

Dear Veronika Mader,

first of all we want to congratulate you on your great master piece. You have already known the topic while visiting our company together with your master class of confectioners from Munich.

What was the initial idea?

We had the opportunity to choose the topic of our master’s examination on our own and I immediately knew that my topic should be related with the nature. In our childhood, we were often outside and played a lot in the nature and in the forest. For my master’s examination, I wanted to illustrate the nature and especially the forest in a modern and fresh way but also as a relaxing and diverse place. The deer – which is for me a very beautiful and impressive animal – should be the centre of my master piece, above all other creations. I’ve developed all other ideas from time to time, the colour, the taste and the look had to match with the topic.

How much time do you usually spend for such an extraordinary work?

We created the master piece project within 24 hours (2.5 days) in the confectionery master school in Munich. The time was very short and you can say that it was our major enemy. But we literally “masterd” this challenge.

The time that we had to spend in advance is hard to believe. Weeks and months before, I tinkered, experimented and tried out some recipes. I developed my master piece, I rejected a lot of ideas, I followed up some ideas and refined others. I was most of the time thinking about my project, also outside of school. In addition to the master piece itself, you have to create drawings and descriptions, you have to calculate the costs and you have to submit all recipes in written form.

Did you prepare the whole master piece by hand?

The deer, the showpiece, is the chocolate creation par excellence. The ideas for the cake topping (flower on root), or the strawberry on the ice cream bombe  have also been developed from time to time and by spending constantly time with the “material” chocolate. For the flavourful creations, I made a list of all raw materials and ingredients which are growing in the forest.

On this list, you could find various blossoms, roots, berries, leaves, nuts and fruits. I combined them in a creative way and tested these creations several times. The final creations for the pralines are for example pistachio-crunchy-layered nougat, cherry-marzipan-praline, raspberry-lemon balm moulded chocolate, cassis-sour cream moulded praline, fir-honey-truffle, almond slices with pine nuts – sounds tasty, doesn’t it?

„Woidgschicht’n“ (in English: forest histories) are scenes or extracts which are supposed to illustrate the forest life, right?

Exactly, and they also show that the forest is not only a pleasure for the eyes; the forest is also a source of food for human beings and for animals. We need to be aware of how precious the nature is and that it is important to save the nature and to preserve it.

The icing on the cake is the deer’s head with its antlers. How did you mould it?

Initially, I tried to make my own mould by taking a deer head ornament, but that didn’t work very well. During the visit of your company, we got into a conversation and you consented to produce a silicone mould for me.

The head was primarily poured with milk chocolate coating which I filled into your silicone mould; afterwards, I did the fine tuning with carving tools and breathed new life into it.

The antlers have been modeled with a chopped dark chocolate coating. This coating was mixed in a blender until the consistency is good for modeling. The right timing is very important because you need to work fast and you need to finish the creation very quickly before the chocolate cures. The antlers and the head have been connected together with chocolate. The basic color is made by a spray coating; furthermore, I painted the eyes, the face and the fur with a paintbrush and structured it a little bit.

All creations of your master piece are made of real chocolate?

Yes, everything is made of real chocolate or rather coating. The whole master piece is made of 5 kg dark chocolate coating, milk chocolate coating and white chocolate.

You could eat the whole master piece, but therefore, it is too precious.

Please state three things which you connect with chocolate.

  1. Indulgence
  2. Childhood
  3. Singularity

What does chocolate mean to you?

For me, chocolate is a very interesting and divers raw material which can be the fundament but also that certain something of my work. It depends on the usage, but chocolate has a lot of facets. As confectioner, I can use all these different facets for my creations.

I love working with chocolate and yes, it is also a luxury food for me.

Requirements for the master piece:

 

  • The master piece has to be made of chocolate or sugar or both and has to match with the topic
  • 6 x 20 pralines, different flavors (1x almond slivers, 1x flavor truffle, 1x molded praline, remaining creations freely selectable, no duplicates allowed)
  • 4 types of marzipan, of each type 3 similar figurines which have to match with the topic
  • One written sign with “master’s examination 2019”
  • One slice cake, each slice and the sides of the cake with garnish, in the middle of the cake a topping which has to match with the topic
  • One ice cream cake, with decoration and topping which have to match with the topic
  • 3 x 10 different puff pastries
  • 4 x 10 Mousse-cream Fours or Petit Fours

One baumkuchen (pyramid cake) with minimum 15 baked layers and decoration topping which has to match to the topic

 

 

Die Meisterschüler der Konditoren-Innung München haben im Mai diesen Jahres  die HANS BRUNNER GmbH besucht. Beim letzten Besuch dieser Art wurde die Firma BRUNNER  von einer Absolventin der Meisterklasse um Unterstützung bei der Umsetzung Ihrer Idee für ein aufwendiges Meisterstück gebeten, die selbstverständlich gerne zugesagt wurde. Veronika Mader, frisch gebackene Konditormeisterin, hat sich nun gerne zu einem Interview bereit erklärt.

zunächst beglückwünschen wir Sie zu Ihrem tollen Meisterstück. Sie hatten die Idee ja bereits als Sie uns mit der Meisterschule der Konditoren aus München besuchten.

Was war der zündende Gedanke?

Wir durften das Thema für unsere Meisterprüfung frei wählen und bei mir war von Anfang an das Thema Natur im Kopf. Als Kinder waren wir sehr viel draußen und haben schon immer viel in der Natur und im Wald gespielt. Ich wollte die Natur und besonders den Wald in meiner Meisterprüfung irgendwie modern und frisch aber doch als erholsamen und vielfältigen Ort darstellen.

Der Hirsch, für mich ein sehr schönes und beeindruckendes Tier, sollte den Mittelpunkt meines Meisterschaufensters darstellen und quasi über allem stehen. Nach und nach sind die weiteren Ideen entstanden, die natürlich farblich, geschmacklich und optisch zum Thema passen mussten.

 

Wie viel Zeit wendet man ungefähr für so eine außergewöhnliche Arbeit auf?

Das  Meisterprüfungsprojekt haben wir in 24 Stunden (2 ½ Tage) in den Räumen der Münchner Meisterschule hergestellt. Die Zeit war sehr knapp und man kann sagen sie war unser größter Gegner. Aber wir haben die Herausforderung im wahrsten Sinne des Wortes gemeistert.

Das was im Vorfeld schon an Zeitaufwand nötig war, ist schwer zu fassen. Die ganzen Wochen und Monate zuvor war ich am tüfteln, experimentieren, Rezepte ausprobieren, habe mein Schaustück entwickelt, vieles verworfen, manches weiterverfolgt und weiterentwickelt und war mit den Gedanken auch außerhalb der Schule meistens bei meinem Projekt.

Auch muss man zusätzlich zum Schaustück an sich, Zeichnungen und Beschreibungen erstellen, Kosten kalkulieren und alle Rezepte schriftlich abgeben.

 

Ist alles von Ihnen handgefertigt?

Ja natürlich! Alles was in meinem Meisterprüfungsprojekt zu sehen ist wurde in den 24 h von mir selbst handgefertigt.

 

Insbesondere gefallen uns natürlich die Schokoladen-Kreationen. Wie kommt man auf die Idee?

 Die Schokoladen-Kreation schlechthin ist natürlich das Schaustück – der Hirsch. Aber auch der Tortenaufsatz (Blüte auf Wurzel) oder die Erdbeere auf der Eisbombe sind mit der Zeit und der vielfältigen und ausdauernden Beschäftigung mit dem Thema und dem „Werkstoff“ Schokolade entstanden.

Für die geschmacklichen Kreationen habe ich mir eine Liste gemacht welche Rohstoffe und Zutaten im Wald wachsen. Verschiedene Blüten, Wurzeln, Beeren, Blätter, Nüsse und Früchte standen dann dort auf dem Zettel und diese habe ich kreativ miteinander kombiniert und auch wieder viel ausprobiert.

Das Ergebnis bei den Pralinen war z. B. Pistazien-Crunchy-Schichtnougat, Kirschmarzipanpraline, Himbeer- Zitronenmelisse Formpraline, Cassis-Sauerrahm Formpraline, Tannenhonigtrüffel, Mandelsplitter mit Pinienkernen – hört sich lecker an, oder?

 

"Woidgschicht'n" sind Szenen oder Ausschnitte, die das Leben im Wald darstellen sollen, oder?

Ja genau und sie sollen vor allem darstellen, dass der Wald nicht nur Genuss für das Auge, sondern auch Nahrungsquelle für Mensch und Tier ist.

Dass einem mal wieder bewusst wird, wie wertvoll die Natur ist und dass es wichtig ist sie zu schützen und zu erhalten.

 

Die Krönung des Ganzen ist im wahrsten Sinne des Wortes der Kopf mit dem Geweih. Wie wurde dies modelliert?

Ursprünglich habe ich versucht mit Hilfe eines Deko-Hirschkopfes selbst eine Form zu machen was leider nicht so gut klappte. Bei der Besichtigung Ihres Betriebes kamen wir dann ins Gespräch und Sie haben sich bereiterklärt für mich eine Silikonform zu erstellen.

Der Kopf wurde mit Ihrer Form zuerst in Vollmilchkuvertüre gegossen, mit Schnitzwerkzeug habe ich ihm dann noch den Feinschliff verpasst und Leben eingehaucht. Das Geweih wurde aus einer gekutterten Zartbitterkuvertüre modelliert. Diese wird im Mixer so lange gemixt bis sie modellierfähig ist. Dabei ist der richtige Zeitpunkt extrem wichtig weil man schnell arbeiten und fertig sein muss,  bevor die Schokolade aushärtet. Geweih und Kopf wurden auch mit Schokolade verbunden. Sprühkuvertüre bildet den Untergrund der Farbgebung des Kopfes, zusätzlich wurden die Augen, das Gesicht und das Fell mit dem Pinsel bemalt und etwas strukturiert.

 

Ist alles echte Schokolade?

Ja, alles wurde aus echter Schokolade bzw. Kuvertüre gefertigt. Ich habe alleine für das gesamt Schaustück 5 kg Zartbitterkuvertüre, Vollmilchkuvertüre und weiße Schokolade verarbeitet. Man kann es quasi komplett essen, aber dafür wäre es zu schade.

Was bedeutet Schokolade für Sie?

Schokolade ist für mich ein sehr interessanter und vielfältiger Rohstoff, der für meine Arbeit sowohl Grundlage als auch das gewisse Etwas sein kann. Je nach Einsatzgebiet hat er viele Facetten die ich als Konditorin für das Gelingen meiner Kreation nutzen kann. Ich arbeite sehr gerne mit Schokolade und ja, es ist für mich persönlich schon auch ein Genussmittel.
